Brahmins Vegetable Kurma
Ingredients
Potato, Tomato, Carrot, Onion (washed, cleaned, and chopped) – Total 400g (2 cup).
Soaked green peas (in fresh water for three hours) – 100g (1/2 cup)
Water – 600ml (3 cup)
Coconut milk- 120ml (1/2 cup)
Peeled garlic – 8 Nos
Cloves (as required)
Ginger – 1 inch piece
Green Chilly – 2 Nos.
Coconut oil – 8ml (1/2 tbsp)
Mustard – 2.5g (1/2 tsp)
Brahmins Vegetable Curry Masala Powder – 12gm (2tbsp)
Salt to taste
Curry leaves – 2 springs
Coriander leaves – optional.
Preparation method
Take the soaked green peas and chopped vegetables in a pressure cooker along with water, salt and cook till 2 whistles.
Heat oil in a pan, add mustard seeds.
When it pops, add green Chillies, chopped ginger, garlic, curry leaves and sauté when it turns crisp.
Pour the tempering to the cooked vegetables and add Brahmins Vegetable Curry Masala Powder
Stir and bring to a boil over low heat. Add the coconut milk and stir well (Do not allow to boil).
Remove from heat and garnish with coriander leaves. Tasty vegetable curry ready to serve.
